Ingredientes :
leMarinada:
40 cl de leche de coco
400 gr de filetes de pescado (merluza, salmón, dorada, ...)
12 gambones crudos
1 zanahoria
1/2 pimiento rojo
1 pepino
3 ramitas de perejil
10 ramitas de cebollino
2 ramitas de menta
1 limón verde
2 limones amarillos
1 pizca de puré de pimienta o tabasco sal
pimienta blanca
Preparacion :
Lavar el pescado y cortarlo en cubos.
Extenderlo en una fuente y salar.
Echar por encima el jugo de los limones.
Pelar los gambones y cortarlos en dos.
Añadirlos al pescado.
Meterlo durante 10 minutos en la nevera.
Pelar las verduras.
Rallar la zanahoria y cortar el pimiento rojo y el pepino en dados.
Echar la leche de coco y la marinada de pescado en una ensaladera.
Incorporar el pimiento, la sal y la pimienta.
Mezclar con el pescado, las gambas y las verduras.
Dejar marinar en la nevera hasta que se vaya a servir. (al menos 30 minutos).
Echarlo en una ensaladera o en copas individuales, parmesar de menta picada, de perejil y cebollino picado. Servir fresco.
